It is also used in cooling baths, scale and gypsum removing agents, leavening agent for baked goods and a defatting agent for textiles. Further, it acts as a buffer used in the purification of chemicals. In addition to this, it is involved in the gel digestion of proteins by trypsin and mass spectrometric analysis of proteins.
